The School Cafeteria Manger manages all aspects of the food service operations including staff supervision, food production (preparation of food by following school menus), sanitation and safety (food handling, preparation, storage and general cleaning of the kitchen), orders food supplies, condiments, equipment, and non-food supplies insuring that all necessary stock is on hand to run the cafeteria properly.
School Cafeteria Mangers are also knowledgeable on the operation of kitchen equipment, estimating food preparation amounts and adjusting recipes, evaluates prepared food for flavor, appearance and temperature according to dietary guidelines
The School Cafeteria Manger ensures that the kitchen and the staff meet all standards of local, state and federal health and National School Lunch Program (NSLP) regulations.
With new school cafeteria regulations in place, prepackaged and processed food has been eliminated wherever possible in the schools, and healthier fresh foods have been added to the menu to encourage child nutrition. The School Cafeteria Manger must comply with these mandated health requirements.
